You don’t need me to tell you how important batter is to our business. It needs to be the very best quality consistently, to coat evenly, to stay crisp when cooked and it needs to work on our famous battered chips as well as our fish.
You may not notice but behind the scenes we have always been tweaking our batter – the way we mix it and the way we cook it – and once we think we have it just right we tweaked it again to make it even better. We have over the years used various batter mixes constantly seeking out the best but last year we decided it was about time that Krispies had its own bespoke batter. But of course, we didn’t want to put our name to anything but the very best. We wanted to use only 100% natural ingredients and to work with a company who we knew shared our passion for excellent food and maintaining very high standards.
Ceres PFI create and make natural batter and sauce mixes for the food industry and have worked with top Chef Phil Vickery. The company was founded by Stelios Theocharous in 2009 who, along with his talented team, work tirelessly to create crispy batter using the very best natural ingredients. We had worked with Stelios for around five years and as his and our business grew our relationship blossomed so it felt like a natural fit to ask him to craft us our very own batter.
We started by sitting down with Stelios to look at all the pros and cons of the batter we were using at the time and to tell him how we wanted it changed to make it perfect for us. We tasked him with converting all the cons into pros without creating any more negatives! We were very clear that we only wanted to use 100% natural ingredients and that we needed the mix to be suitable for our battered chips as well as our fish.
Always up for a challenge and delighted to comply with our stringent requests Stelios went away and developed something unique to Krispies. It took nearly six months of working together and testing different mixes to get a batter we felt was good enough to carry our name.
As with all Ceres batter mixes Krispies Batter uses only the finest British Wheat, which is milled to a very tight specification but it is the addition of a few secret extras which make it super special and totally unique to us.
It has been a great pleasure, after all these years, to finally develop our own batter mix. Working with Stelios has been a great pleasure as he understood from the start what we wanted to achieve and that we would not comprise on quality. His talent, professionalism and enthusiasm allowed us to achieve our aim.
